Healthy-ish Homemade Banana Teacake

With days and nights at home, we're spending a lot of time as a family in the kitchen baking, cooking, laughing, and eating. One of our favorite recipes is Banana Bread...but with a healthy twist, of course!

we're spending a lot of time as a family in the kitchen baking, cooking, laughing, and eating. One of our favorite recipes is Banana Bread...but with a healthy twist, of course!

You'll need:

½ cup honey

3 eggs

1/2 cup coconut oil

3 very ripe bananas

¼ cup milk of choice  

1 teaspoon baking soda

1 teaspoon vanilla extract

½ teaspoon salt

½ teaspoon ground cinnamon,

1 ¾ cups whole wheat flour, almond flour or gluten free flour.

And, a mixing bowl of course!


Directions:

Preheat oven to 325 degrees and line a 9×5-inch loaf pan with parchment paper. 

In a large bowl, combine the butter and honey, followed by the eggs, mashed bananas and milk. Whisk away!

Then add the baking soda, vanilla, salt and cinnamon.

Lastly, stir in the flour and carefully pour into pan. Sprinkle the top lightly with cinnamon and for a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.

Place in oven, bake for 55 to 60 minutes or until can poke with a tooth pick and comes out clean. Cool for 10 minutes, slice and yummmm...
